Ingredients
  

For the Zucchini Boats

  • 4 medium zucchini
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced
  • 1 small red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • ½ cup chopped mushrooms
  • ½ cup fresh spinach, chopped
  • ½ teaspoon Italian seasoning
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes, optional
  • ½ cup breadcrumbs
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

Instructions
 

  • Preheat your oven to 400°F (200°C).
    Lightly grease a large baking dish or line it with parchment paper.
  • Wash and dry the zucchini. Cut each zucchini in half lengthwise.
    Using a small spoon, carefully scoop out the center, leaving about ¼ inch of zucchini flesh around the edges.
    Finely chop the zucchini flesh you remove and reserve it for the filling.
  • Place the zucchini halves cut-side up in the prepared baking dish.
    Lightly brush them with olive oil and season with a small pinch of salt and pepper.
    Bake for approximately 8–10 minutes to begin softening the zucchini.
  • While the zucchini is baking, heat olive oil in a large skillet over medium heat.
    Add the diced onion and bell pepper. Cook for 3–4 minutes until they begin to soften.
    Add the chopped zucchini flesh and mushrooms. Cook for another 3–4 minutes.
  • Add the minced garlic and chopped spinach.
    Cook for approximately 1–2 minutes, stirring frequently, until the spinach wilts and the garlic becomes fragrant.
  • Stir in the diced tomatoes, Italian seasoning, oregano, garlic powder, salt, black pepper, and red pepper flakes if using.
    Cook for another 3–4 minutes until the mixture becomes slightly thickened.
  • Remove the skillet from the heat.
    Stir in the breadcrumbs, half of the mozzarella, and the Parmesan cheese.
    Mix until everything is evenly combined.
  • Remove the zucchini from the oven.
    Carefully spoon the vegetable filling into each zucchini boat, pressing it gently into the hollowed centers.
    Sprinkle the remaining mozzarella over the top.
  • Return the zucchini boats to the oven.
    Bake for approximately 18–20 minutes, or until the zucchini is tender and the cheese is melted and golden.
    For a more golden topping, broil for 1–2 minutes at the end while watching carefully.
  • Remove from the oven and allow the zucchini boats to rest for a few minutes.
    Garnish with fresh basil or parsley and additional Parmesan.
    Serve warm.
