Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 3/4 cup water
  • 2 cups tortilla chips, crushed (plus more for topping)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 2 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes (optional)
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup chopped green onions (optional)
  • 1 cup sour cream (for serving)
  • 1/2 cup salsa (for serving)

Instructions
 

Preheat Oven :

  • Preheat your oven to 375°F (190°C).

Cook the Beef :

  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess grease. Add taco seasoning and water, then simmer for 5 minutes.

Assemble the Casserole :

  • In a greased 9x13-inch baking dish, layer half of the crushed tortilla chips, followed by the seasoned beef, black beans, corn, and half of the shredded cheese. Repeat the layers, finishing with cheese on top.

Bake :

  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Serve :

  • Remove from the oven and let cool for 5 minutes. Top with diced tomatoes, olives, and green onions if desired. Serve with sour cream and salsa on the side.

Notes

  • Use flavored tortilla chips (like nacho cheese) for an extra kick of flavor.
  • Feel free to substitute ground beef with ground turkey or plant-based crumbles.
  • Add jalapeños for a spicy twist.
