- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 2 cup shredded cheddar cheese
- 1/2 cup diced tomatoes (optional)
- 1/4 cup sliced black olives (optional)
- 1/4 cup chopped green onions (optional)
- 1 cup sour cream (for serving)
- 1/2 cup salsa (for serving)
Assemble the Casserole :
In a greased 9x13-inch baking dish, layer half of the crushed tortilla chips, followed by the seasoned beef, black beans, corn, and half of the shredded cheese. Repeat the layers, finishing with cheese on top.
