For the Lobster Mushroom Dish :
- 1 pound fresh lobster mushrooms, cleaned and sliced
- 2 tbsp olive oil
- 1 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1/2 cup white wine (optional)
- 1 cup heavy cream (or coconut cream for a vegan option)
- 1/4 cup grated Parmesan cheese (omit for vegan version)
- 1 tsp fresh thyme leaves
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Sauté the Base :
Heat olive oil and butter in a large skillet over medium heat.
Add the garlic and onion, sautéing until fragrant and translucent, about 3 minutes.
Cook the Mushrooms :
Add the sliced lobster mushrooms to the skillet and sauté for 5-7 minutes until they release their moisture and begin to brown.
Season with salt, pepper, smoked paprika, and thyme.
Deglaze and Simmer :
Deglaze the skillet with white wine, scraping up any browned bits from the bottom. Let it simmer for 2 minutes to reduce slightly.
Stir in the heavy cream and Parmesan cheese (if using). Simmer gently for 5-7 minutes until the sauce thickens.
