A tender and flaky tilefish dish with a zesty lemon butter sauce.

- 4 tilefish fillets (about 6 ounces each)
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1 tsp lemon zest
- 1 tsp fresh thyme leaves
- 1/4 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Sear the Fish :
Heat olive oil in a large skillet over medium-high heat.
Place the tilefish fillets skin-side down and cook for 3-4 minutes until the skin is crispy and golden.
Flip the fillets and cook for another 3-4 minutes until the fish is opaque and flakes easily with a fork. Remove from the skillet and set aside.
Make the Lemon Butter Sauce :
In the same skillet, melt the butter over medium heat.
Add the minced garlic and sauté for 1-2 minutes until fragrant.
Stir in the lemon juice, lemon zest, and thyme. Simmer for 2 minutes.
Combine and Serve :
Return the tilefish fillets to the skillet, spooning the sauce over them to coat.
Garnish with fresh parsley and serve immediately with your choice of sides.
