Ingredients
  

For the Cake :

  • 2 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 2 cup granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 cup buttermilk
  • 1 cup shredded sweetened coconut
  • 6 oz white chocolate, melted and cooled

For the Glaze :

  • 1 cup powdered sugar
  • 2 tbsp coconut milk (or regular milk)
  • 1/2 tsp vanilla extract
  • 1/4 cup shredded sweetened coconut (for garnish)

Instructions
 

  • Preheat the Oven :
    Preheat your oven to 350°F (175°C). Grease and flour a bundt pan or use a non-stick spray.
  • Mix Dry Ingredients :
    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • Cream Butter and Sugar :
    In a large bowl, use an electric mixer to cream the butter and sugar until light and fluffy, about 2-3 minutes.
  • Add Eggs and Extracts :
    Beat in the eggs, one at a time, followed by the vanilla and almond extracts.
  • Incorporate Dry Ingredients :
    Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients.
  • Add Coconut and White Chocolate :
    Fold in the shredded coconut and melted white chocolate until just combined.
  • Bake the Cake :
    Pour the batter into the prepared bundt pan and smooth the top. Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
  • Cool :
    Allow the cake to cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
  • Prepare the Glaze :
    In a small bowl, whisk together powdered sugar, coconut milk, and vanilla extract until smooth. Adjust consistency if needed.
  • Glaze the Cake :
    Drizzle the glaze over the cooled cake and sprinkle with shredded coconut.
