Ingredients
  

  • 2 cups mashed sweet potatoes (about 2 large sweet potatoes)
  • 1 can (14 oz) sweetened condensed milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp 1/2 teaspoon ground cinnamon
  • 1/4 tsp 1/4 teaspoon ground nutmeg
  • 1/4 tsp salt
  • 1 unbaked 9-inch pie crust (store-bought or homemade)

Instructions
 

Prepare the Sweet Potatoes :

  • Wash, peel, and boil sweet potatoes until tender (about 15-20 minutes). Drain and mash until smooth.

Make the Filling :

  • In a mixing bowl, combine mashed sweet potatoes, condensed milk, eggs, vanilla extract, cinnamon, nutmeg, and salt. Whisk until smooth and well blended.

Assemble the Pie:

  • Preheat the oven to 350°F (175°C). Place the unbaked pie crust in a pie dish and pour the filling into the crust, spreading it evenly.

Bake the Pie :

  • Bake in the preheated oven for 50-60 minutes, or until the filling is set and a toothpick inserted in the center comes out clean.

Cool and Serve :

  • Let the pie cool on a wire rack for at least 10 minutes before slicing. Serve warm or chilled, with whipped cream if desired.

Notes

  • For a smoother filling, use a blender or food processor to puree the sweet potatoes.
  • Ensure the pie crust edges don’t burn by covering them with aluminum foil during baking if necessary.
