Ingredients
  

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 pound ground beef (or ground turkey)
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup beef or chicken broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp cayenne pepper (optional, for heat)
  • Salt and pepper to taste
  • Fresh cilantro and shredded cheese for garnish (optional)

Instructions
 

Heat the Oil :

  • In a large pot or Dutch oven, heat olive oil over medium heat.

Cook the Aromatics :

  • Add diced onion and minced garlic. Sauté until the onion becomes translucent, about 2-3 minutes.

Brown the Meat :

  • Add ground beef and cook until browned, breaking it apart with a wooden spoon. Drain excess fat if necessary.

Add Vegetables and Seasonings :

  • Stir in the diced bell pepper, chili powder, cumin, paprika, oregano, cayenne pepper, salt, and pepper. Cook for another 2 minutes to toast the spices.

Incorporate Tomatoes and Beans :

  • Add the diced tomatoes, tomato paste, and kidney beans. Stir to combine.

Simmer :

  • Pour in the broth and bring the chili to a boil. Reduce the heat to low, cover, and let it simmer for 20-30 minutes, stirring occasionally.

Adjust Seasoning :

  • Taste and adjust seasoning if needed. Add more chili powder or cayenne for extra heat.

Serve :

  • Ladle the chili into bowls and garnish with fresh cilantro, shredded cheese, or a dollop of sour cream. Serve with cornbread or tortilla chips on the side.

Notes

  • For a vegetarian version, replace the meat with extra beans or crumbled tofu.
  • Chili tastes even better the next day as the flavors deepen overnight.
