- 8 oz chow mein noodles (or egg noodles)
- 1 lb pork tenderloin or shoulder (thinly sliced)
- 2 tbsp soy sauce (divided)
- 1 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 1 tbsp cornstarch
- 2 tbsp vegetable oil (divided)
- 1 small onion (sliced)
- 1 cup shredded cabbage
- 1 cup julienned carrots
- ½ cup sliced bell peppers
- 2 cloves garlic (minced)
- 1 tsp grated ginger
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- Optional: green onions and sesame seeds for garnish
Cook the noodles: Prepare the chow mein noodles according to package instructions. Drain and set aside. Marinate the pork: In a bowl, combine the pork slices with 1 tbsp soy sauce, cornstarch, and sesame oil. Let marinate for 5-10 minutes. Prepare the sauce: In a small bowl, mix oyster sauce, hoisin sauce, 2 tbsp low-sodium soy sauce, and 1 tbsp water. Set aside. Stir-fry the pork:Heat 1 tbsp vegetable oil in a large wok or skillet over high heat. Stir-fry the pork for 3-4 minutes until cooked through. Remove and set aside. Cook the vegetables: Add the remaining oil to the wok. Stir-fry the onion, garlic, and ginger for 1 minute. Add cabbage, carrots, and bell peppers, cooking until slightly tender but still crisp. Combine: Return the pork to the wok and add the cooked noodles. Pour the sauce over the mixture and toss until evenly coated and heated through. Serve: Transfer to a serving dish and garnish with green onions and sesame seeds if desired.
