- 1/4 cup unsalted butter, cut into small pieces
Prepare Ingredients: In a medium saucepan, whisk together egg yolks, lime juice, lime zest, and sugar until well combined. Cook the Mixture: Place the saucepan over medium-low heat. Stir constantly with a wooden spoon or silicone spatula to prevent curdling. Cook until the mixture thickens and coats the back of the spoon (about 10-12 minutes). Add Butter: Remove the saucepan from heat. Gradually stir in the butter pieces until fully melted and incorporated. Strain the Curd: For an extra smooth texture, strain the curd through a fine-mesh sieve into a bowl. Cool and Store: Allow the lime curd to cool to room temperature, then transfer it to a sterilized jar. Refrigerate for up to 2 weeks.
