- 1 cup (226g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large egg
- 1 ½ tsp almond extract
- 2 ½ cups (315g) all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- ¼ cup (30g) sliced almonds (optional, for topping)
Preheat Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper. Cream Butter & Sugar: In a large bowl, beat the butter and sugar together until light and fluffy. Add Wet Ingredients: Mix in the egg and almond extract until well combined. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Form the Dough: Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. Chill the Dough (Optional): Wrap the dough in plastic wrap and refrigerate for 30 minutes for firmer cookies. Shape & Bake: Roll the dough into small balls, place them on the baking sheet, and flatten slightly. Sprinkle with sliced almonds if desired. Bake: Bake for 9–11 minutes or until the edges turn golden brown. Cool & Enjoy: Let the cookies cool on a wire rack before serving.
- Chilling the dough helps create thicker, chewier cookies.
- Almond extract enhances the flavor, but you can reduce the amount if you prefer a milder taste.
- You can drizzle melted chocolate over the cookies for extra indulgence.
