For the Cookies:
- 2 ½ cup all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ tsp almond extract (optional)
- ½ tsp salt
- ½ tsp baking powder
For the Decorations:
- Royal icing or melted chocolate
- Food coloring
- Sprinkles
- Lollipop sticks
Step 1: Make the Cookie Dough
In a large bowl, cream together butter and sugar until light and fluffy.
Add the egg, vanilla extract, and almond extract (if using), and mix until well combined.
In a separate bowl, whisk together the flour, salt, and baking powder.
Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
Step 3: Roll & Cut Shapes

Carefully insert a lollipop stick into the base of each cookie, ensuring it’s secure.
Place the cookies on the prepared baking sheet and bake for 10-12 minutes or until edges are lightly golden.
Let cookies cool completely before decorating.
Step 5: Decorate
Use royal icing, melted chocolate, or sprinkles to decorate your cookie pops.
Let the icing set completely before packaging or serving.
- If dough becomes too soft while rolling, refrigerate again for 10 minutes.
- Make sure the cookie sticks are firmly pressed into the dough before baking to prevent them from falling off.
- Store in an airtight container for up to a week.
