Summer Peach Bars
- 2 ½ cups all-purpose flour
- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- ½ tsp saltx
- 1 tsp vanilla extract
For the Peach Filling:
- 4 cups fresh peaches, peeled & diced (or canned, drained)
- ½ cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp cinnamon
- 1 tbsp lemon juice
- ½ tsp vanilla extract
Step 1: Prepare the Crust & Topping
Preheat oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
In a bowl, mix flour, sugar, and salt. Add butter and vanilla, mixing until a crumbly dough forms.
Press two-thirds of the mixture into the bottom of the pan to form the crust. Bake for 15 minutes, then set aside.
Step 2: Make the Peach Filling
In a bowl, toss peaches with sugar, cornstarch, cinnamon, lemon juice, and vanilla.
Spread the peach mixture evenly over the pre-baked crust.
Step 3: Assemble & Bake
Sprinkle the remaining crumb mixture over the peach filling.
Bake for 35-40 minutes, or until golden brown.
Let the bars cool before cutting into squares.
- Use fresh, ripe peaches for the best flavor. If using canned peaches, drain them well.
- Chilling the bars before cutting makes them easier to slice.
- Store leftovers in the refrigerator for up to 5 days.
