Ingredients
  

Summer Peach Bars

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ½ tsp saltx
  • 1 tsp vanilla extract

For the Peach Filling:

  • 4 cups fresh peaches, peeled & diced (or canned, drained)
  • ½ cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • ½ tsp vanilla extract

Instructions
 

Step 1: Prepare the Crust & Topping

  • Preheat oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
  • In a bowl, mix flour, sugar, and salt. Add butter and vanilla, mixing until a crumbly dough forms.
  • Press two-thirds of the mixture into the bottom of the pan to form the crust. Bake for 15 minutes, then set aside.

Step 2: Make the Peach Filling

  • In a bowl, toss peaches with sugar, cornstarch, cinnamon, lemon juice, and vanilla.
  • Spread the peach mixture evenly over the pre-baked crust.

Step 3: Assemble & Bake

  • Sprinkle the remaining crumb mixture over the peach filling.
  • Bake for 35-40 minutes, or until golden brown.
  • Let the bars cool before cutting into squares.

Notes

  • Use fresh, ripe peaches for the best flavor. If using canned peaches, drain them well.
  • Chilling the bars before cutting makes them easier to slice.
  • Store leftovers in the refrigerator for up to 5 days.
