Ingredients
  

For the Cookie Dough:

  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 ¼ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt

For the Fig Filling:

  • 1 cup fig jam (homemade or store-bought)
  • 1 tbsp orange zest (optional)
  • ½ tsp cinnamon

Instructions
 

Step 1: Prepare the Dough

  • In a bowl, cream butter, granulated sugar, and brown sugar until fluffy.
  • Add the egg and vanilla extract, mixing until combined.
  • In another bowl, whisk flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Cover and chill the dough for 30 minutes.

Step 2: Prepare the Fig Filling

  • In a small bowl, mix fig jam, orange zest, and cinnamon. Set aside.

Step 3: Assemble the Cookies

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Roll out the chilled dough on a lightly floured surface to ¼-inch thickness.
  • Cut out small rounds or rectangles and place a teaspoon of fig jam in the center of half of them.
  • Place another cookie round on top and gently press the edges to seal.
  • Use a fork or crimping tool for a decorative edge.

Step 4: Bake & Serve

  • Place cookies on a baking sheet and bake for 12-15 minutes, or until golden brown.
  • Allow to cool before serving.

Notes

  • For a softer cookie: Bake for 12 minutes and let them cool on the tray.
  • Use fresh or dried figs: If making homemade fig jam, simmer chopped figs with sugar and water until soft.
  • Chill the dough to prevent spreading and ensure easy handling.
