For the Cookie Dough:
- 1 cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 ¼ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
For the Fig Filling:
- 1 cup fig jam (homemade or store-bought)
- 1 tbsp orange zest (optional)
- ½ tsp cinnamon
Step 1: Prepare the Dough
In a bowl, cream butter, granulated sugar, and brown sugar until fluffy.
Add the egg and vanilla extract, mixing until combined.
In another bowl, whisk flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Cover and chill the dough for 30 minutes.

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Roll out the chilled dough on a lightly floured surface to ¼-inch thickness.
Cut out small rounds or rectangles and place a teaspoon of fig jam in the center of half of them.
Place another cookie round on top and gently press the edges to seal.
Use a fork or crimping tool for a decorative edge.
Step 4: Bake & Serve
Place cookies on a baking sheet and bake for 12-15 minutes, or until golden brown.
Allow to cool before serving.
- For a softer cookie: Bake for 12 minutes and let them cool on the tray.
- Use fresh or dried figs: If making homemade fig jam, simmer chopped figs with sugar and water until soft.
- Chill the dough to prevent spreading and ensure easy handling.
