Ingredients
  

  • 1 half chicken (split whole chicken)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 tbsp lemon juice
  • 1 tsp soy sauce (optional)

Instructions
 

Preheat

  • the oven to 400°F (200°C) or prepare a grill at medium-high heat.

Pat dry

  • the chicken with a paper towel.

Season

  • the chicken by mixing olive oil, salt, black pepper, paprika, garlic powder, onion powder, oregano, thyme, lemon juice, and soy sauce in a bowl. Rub the mixture all over the chicken.

Cook the chicken:

    For roasting:

    • Place the chicken skin-side up on a baking tray and roast for 40-45 minutes or until the internal temperature reaches 165°F (75°C)

    For grilling:

    • Place the chicken skin-side down and grill for 6-8 minutes per side, then reduce heat and cook for another 25-30 minutes.

    Rest the chicken

    • for 10 minutes before slicing to retain its juices.

    Serve and enjoy!

      Notes

      • Let the chicken marinate for up to 24 hours for enhanced flavor.
      • Use a meat thermometer to ensure the chicken is cooked thoroughly.
      • For extra crispy skin, broil the chicken for the last 5 minutes of roasting.
