Ingredients
  

  • 2 boneless, skinless chicken breasts (or thighs)
  • 1/4 cup fresh lime juice
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup fresh cilantro, chopped
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional for heat)
  • 1 tsp honey (optional for balance)

Instructions
 

  • Prepare the marinade: In a bowl, whisk together lime juice, olive oil, garlic, cilantro, cumin, paprika, salt, black pepper, red pepper flakes, and honey.
  • Marinate the chicken: Place the chicken in a resealable bag or bowl and coat it with the marinade. Refrigerate for at least 30 minutes (or up to 24 hours for deeper flavor).
  • Cook the chicken:
  • Grill: Preheat the grill to medium-high heat and cook the chicken for 5-7 minutes per side until fully cooked.
  • Pan-sear: Heat a skillet over medium heat and cook for 5-6 minutes per side.
  • Bake: Preheat oven to 375°F (190°C) and bake for 20-25 minutes.
  • Rest and serve: Let the chicken rest for 5 minutes before slicing. Garnish with additional cilantro and lime wedges. Serve with rice, tortillas, or salad.

Notes

  • For extra juiciness, use chicken thighs instead of breasts.
  • Adjust lime juice for a more or less tangy flavor.
  • Store leftovers in the refrigerator for up to 3 days.
