- 2 boneless, skinless chicken breasts (or thighs)
- 1/4 cup fresh lime juice
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup fresh cilantro, chopped
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional for heat)
- 1 tsp honey (optional for balance)
Prepare the marinade: In a bowl, whisk together lime juice, olive oil, garlic, cilantro, cumin, paprika, salt, black pepper, red pepper flakes, and honey.
Marinate the chicken: Place the chicken in a resealable bag or bowl and coat it with the marinade. Refrigerate for at least 30 minutes (or up to 24 hours for deeper flavor).
Cook the chicken:
