Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 1/2 cup barbecue sauce
  • 4 slices bacon, cooked and crumbled
  • 1 cup Monterey Jack cheese, shredded
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/4 cup diced tomatoes (for garnish)
  • 2 tbsp green onions, chopped (for garnish)

Instructions
 

  • Preheat oven: If baking, preheat oven to 375°F (190°C).
  • Prepare the chicken: Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  • Cook the chicken:
    Grill: Heat a grill over medium-high heat and cook chicken for about 5-6 minutes per side.
    Bake: Place chicken in a baking dish, drizzle with olive oil, and bake for 20-25 minutes.
    Pan-sear: Heat olive oil in a skillet and cook chicken for about 6-7 minutes per side.
  • Add toppings: In the last 5 minutes of cooking, brush chicken with barbecue sauce, top with crumbled bacon, and sprinkle shredded Monterey Jack cheese on top.
  • Melt the cheese: Cover the grill or place the skillet under a broiler for 2-3 minutes until the cheese is melted.
  • Garnish and serve: Sprinkle with diced tomatoes and green onions before serving. Enjoy with rice, potatoes, or salad.

Notes

  • Use smoked cheddar or pepper jack cheese for extra flavor.
  • Pre-cook bacon for a crispy texture.
  • Store leftovers in an airtight container for up to 3 days.
