- 2 boneless, skinless chicken breasts
- 1/2 cup barbecue sauce
- 4 slices bacon, cooked and crumbled
- 1 cup Monterey Jack cheese, shredded
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/4 cup diced tomatoes (for garnish)
- 2 tbsp green onions, chopped (for garnish)
Preheat oven: If baking, preheat oven to 375°F (190°C).
Prepare the chicken: Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and black pepper.
Cook the chicken:Grill: Heat a grill over medium-high heat and cook chicken for about 5-6 minutes per side.Bake: Place chicken in a baking dish, drizzle with olive oil, and bake for 20-25 minutes.Pan-sear: Heat olive oil in a skillet and cook chicken for about 6-7 minutes per side. Add toppings: In the last 5 minutes of cooking, brush chicken with barbecue sauce, top with crumbled bacon, and sprinkle shredded Monterey Jack cheese on top.
Melt the cheese: Cover the grill or place the skillet under a broiler for 2-3 minutes until the cheese is melted.
Garnish and serve: Sprinkle with diced tomatoes and green onions before serving. Enjoy with rice, potatoes, or salad.
