- 2 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (preferably Italian-style)
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese (for topping)
- 2 tbsp olive oil
- Fresh basil leaves (for garnish)
Prepare the chicken: Slice chicken breasts in half lengthwise to create thinner cutlets. Season with salt and pepper.
Bread the chicken: Dredge each cutlet in flour, dip in beaten eggs, and coat with a mixture of breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning.
Cook the chicken: Heat olive oil in a pan over medium heat. Cook the chicken cutlets for 3-4 minutes per side until golden brown.
Assemble the dish: Place the cooked chicken on a baking sheet. Spoon marinara sauce over each piece and sprinkle with mozzarella and additional Parmesan cheese.
Bake: Preheat oven to 375°F (190°C) and bake for 15-20 minutes until the cheese is melted and bubbly.
Garnish and serve: Remove from the oven, let rest for 5 minutes, and garnish with fresh basil. Serve with pasta or a side salad.
