Ingredients
  

  • 1 turkey giblet set (neck, heart, liver, gizzard)
  • 4 cup turkey or chicken broth
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 1 small onion, finely chopped
  • 1 celery stalk, finely chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp poultry seasoning
  • 1/2 tsp garlic powder
  • 1 hard-boiled egg, chopped (optional)

Instructions
 

  • In a saucepan, add turkey giblets and broth. Bring to a simmer and cook for about 30-40 minutes until giblets are tender.
  • Remove giblets from the broth and finely chop them. Set aside.
  • In a separate pan, melt butter over medium heat. Add flour and whisk continuously for 2-3 minutes until golden brown.
  • Gradually add the strained turkey broth, whisking to prevent lumps.
  • Stir in the chopped giblets, onion, celery, salt, pepper, poultry seasoning, and garlic powder.
  • Let the gravy simmer for another 5-10 minutes, stirring occasionally until thickened.
  • If using, add the chopped hard-boiled egg for extra richness.
  • Serve warm over turkey, mashed potatoes, or stuffing.

Notes

  • Strain the broth before adding it to the roux for a smooth gravy.
  • Add more broth if you prefer a thinner consistency.
  • Adjust seasonings to your taste.
