Fajitas trace their roots back to the ranchlands of Texas in the 1930s, where Mexican cowboys (vaqueros) would grill tough cuts of beef over an open flame. The name “fajita” comes from the Spanish word “faja,” meaning “strip” or “belt,” referring to the cut of meat traditionally used. Over time, this dish evolved into a popular Tex-Mex staple enjoyed in homes and restaurants worldwide.

Instructions

  • In a bowl, whisk together olive oil, lime juice, garlic, chili powder, cumin, smoked paprika, salt, and black pepper.

  • While the steak is resting, grill the bell peppers and onions for 5-7 minutes, stirring occasionally, until softened and slightly charred.
  • Warm the tortillas on the grill for 30 seconds per side.
  • Assemble the fajitas by adding sliced steak, grilled peppers, and onions to each tortilla. Top with cilantro, sour cream, and salsa if desired.
  • Serve immediately and enjoy!

Notes

  • Flank steak or skirt steak work best for this recipe, but sirloin can also be used.
  • If you don’t have a grill, cook the steak and veggies in a cast-iron skillet over medium-high heat.
  • Adjust the seasoning to your spice preference by adding extra chili powder or cayenne pepper.
