Ingredients
  

  • 1 cup cooked rice or quinoa
  • 1 cup cooked chickpeas or protein of choice
  • 1 medium onion, chopped
  • 1 bell pepper, diced
  • 2 medium tomatoes, chopped
  • 1 cup spinach or kale
  • 1 tbsp olive oil
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder (adjust to taste)
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh cilantro for garnish
  • Lemon wedges for serving

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add the chopped onions and cook until translucent.
  • Stir in the bell pepper and cook for 2-3 minutes until slightly tender.
  • Add the tomatoes and cook until they soften and release their juices.
  • Sprinkle the cumin powder, coriander powder, turmeric, chili powder, garam masala, and salt over the vegetables. Stir well to combine.
  • Add the chickpeas and spinach to the skillet. Cook for 3-5 minutes until the spinach wilts and the chickpeas are heated through.
  • To assemble the bowl, start with a base of cooked rice or quinoa. Top with the spiced vegetable and chickpea mixture.
  • Garnish with fresh cilantro and serve with lemon wedges on the side.

Notes

  • Feel free to substitute or add other vegetables like zucchini, carrots, or broccoli.
  • Adjust the spice level to your preference.
