- 1 cup cooked rice or quinoa
- 1 cup cooked chickpeas or protein of choice
- 1 medium onion, chopped
- 1 bell pepper, diced
- 2 medium tomatoes, chopped
- 1 cup spinach or kale
- 1 tbsp olive oil
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp chili powder (adjust to taste)
- 1/2 tsp garam masala
- Salt to taste
- Fresh cilantro for garnish
- Lemon wedges for serving
Heat olive oil in a large skillet over medium heat. Add the chopped onions and cook until translucent.
Stir in the bell pepper and cook for 2-3 minutes until slightly tender.
Add the tomatoes and cook until they soften and release their juices.
Sprinkle the cumin powder, coriander powder, turmeric, chili powder, garam masala, and salt over the vegetables. Stir well to combine.
Add the chickpeas and spinach to the skillet. Cook for 3-5 minutes until the spinach wilts and the chickpeas are heated through.
To assemble the bowl, start with a base of cooked rice or quinoa. Top with the spiced vegetable and chickpea mixture.
Garnish with fresh cilantro and serve with lemon wedges on the side.
