Ingredients
  

For the Cake

  • 1½ cups finely grated carrots
  • 1½ cups finely ground almonds
  • ¾ cup granulated sugar
  • 4 large eggs, separated
  • ¾ cup all-purpose flour
  • 1½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon ground cinnamon, optional

For the Lemon Glaze

  • 1½ cups powdered sugar
  • 2–3 tablespoons fresh lemon juice
  • 1 teaspoon water, if needed

For Decoration

  • 8–12 small marzipan carrots
  • Sliced almonds, optional
  • Fresh lemon zest, optional

Instructions
 

Prepare the Pan

  • Preheat the oven to 350°F (175°C).
    Grease a 9-inch (23 cm) round springform pan and line the bottom with parchment paper.

Prepare the Carrots

  • Peel and finely grate the carrots.
    If they are particularly juicy, gently press them with a clean kitchen towel to remove some excess moisture. Do not squeeze them completely dry.

Mix the Dry Ingredients

  • In a medium bowl, combine the ground almonds, flour, baking powder, salt, and cinnamon if using.
    Whisk gently to distribute everything evenly.

Beat the Egg Yolks

  • Place the egg yolks and sugar in a large bowl.
    Beat until pale and slightly thickened.
    Add the vanilla extract, lemon zest, and lemon juice and mix well.

Add the Carrots and Almond Mixture

  • Stir the grated carrots into the egg-yolk mixture.
    Gradually fold in the almond-flour mixture until just combined.
    Avoid overmixing.

Whip the Egg Whites

  • Place the egg whites in a clean, dry bowl.
    Beat until firm peaks form.
    Gently fold the whipped egg whites into the cake batter in two or three additions, keeping as much air in the mixture as possible.

Bake the Cake

  • Pour the batter into the prepared springform pan.
    Smooth the top.
    Bake for approximately 45–55 minutes, or until a toothpick inserted into the center comes out mostly clean.

Cool

  • Allow the cake to cool in the pan for 10–15 minutes.
    Remove the sides of the springform pan and transfer the cake to a wire rack.
    Cool completely before glazing.

Prepare the Lemon Glaze

  • Place the powdered sugar in a bowl.
    Gradually whisk in the lemon juice until you have a thick, smooth, pourable glaze.
    If necessary, add a few drops of water.

Glaze the Cake

  • Pour the glaze over the cooled cake.
    Use a spatula to spread it gently toward the edges.
    Allow a small amount of glaze to drip naturally down the sides.

Slice and Serve

  • Cut the cake into neat slices using a sharp knife.
    Serve with coffee, tea, or a light dusting of powdered sugar.
