Ingredients
  

For the Cake

  • 1½ cups finely grated carrots
  • 1½ cups ground almonds
  • ¾ cup granulated sugar
  • 4 large eggs, separated
  • ¾ cup all-purpose flour
  • 1½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon ground cinnamon, optional

For the Lemon Glaze

  • 1½ cups powdered sugar
  • 2–3 tablespoons fresh lemon juice
  • 1 teaspoon water, if needed

For Decoration

  • 8–12 small marzipan carrots
  • Sliced almonds, optional
  • Fresh lemon zest, optional

Instructions
 

Prepare the Pan

  • Preheat the oven to 350°F (175°C).
    Grease a 9-inch (23 cm) round springform pan and line the bottom with parchment paper.

Prepare the Carrots

  • Peel and finely grate the carrots.
    If the carrots are exceptionally juicy, gently press them with a clean kitchen towel to remove a little excess moisture, but do not dry them completely.

Combine the Dry Ingredients

  • In a medium bowl, whisk together the ground almonds, flour, baking powder, salt, and cinnamon if using.
    Set aside.

Beat the Egg Yolks

  • Place the egg yolks and sugar in a large bowl.
    Beat until the mixture becomes pale and slightly thickened.
    Add the vanilla extract, lemon zest, and lemon juice.

Add Carrots and Almonds

  • Stir the grated carrots into the egg-yolk mixture.
    Gradually fold in the almond and flour mixture until just combined.
    Do not overmix.

Whip the Egg Whites

  • In a clean bowl, beat the egg whites until they form firm peaks.
    Gently fold the whipped egg whites into the carrot mixture in two or three additions.
    The batter should remain light and airy.

Bake

  • Pour the batter into the prepared springform pan.
    Smooth the top gently.
    Bake for approximately 45–55 minutes, or until a toothpick inserted into the center comes out mostly clean.

Cool

  • Allow the cake to cool in the pan for approximately 10–15 minutes.
    Remove the sides of the springform pan and transfer the cake to a wire rack.
    Allow it to cool completely before glazing.

Make the Lemon Glaze

  • Place the powdered sugar in a bowl.
    Gradually whisk in the lemon juice until you have a thick but pourable glaze.
    If it is too thick, add a few drops of water.
    If it is too thin, add a little more powdered sugar

Glaze the Cake

  • Pour the glaze over the completely cooled cake.
    Use a spatula to gently spread it toward the edges, allowing a small amount to drip naturally down the sides.

Decorate

  • Arrange marzipan carrots around the top of the cake.
    Add sliced almonds or a little fresh lemon zest if desired.
    Allow the glaze to set before slicing.

  • Carrots: Finely grated carrots provide the best traditional texture.
  • Almonds: Use finely ground almonds or almond meal for a smooth crumb.
