Afghani Noni is a traditional Afghan flatbread known for its soft interior, slightly crisp crust, and decorative patterns. Made from simple ingredients such as flour, yeast, salt, and water, the dough is kneaded, shaped into oval loaves, and baked at high heat. The bread is commonly served with kebabs, stews, rice dishes, or yogurt dips. Its mild flavor and fluffy texture make it a versatile accompaniment to many meals. Though traditionally baked in a tandoor oven, it can also be prepared at home using a conventional oven or skillet. Afghani Noni remains a beloved staple in Afghan cuisine.

Ingredients
  

  • 3 cups all-purpose flour
  • 2 teaspoons active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 cup warm water
  • 2 tablespoons olive oil or vegetable oil

Instructions
 

  • In a bowl, combine warm water, sugar, and yeast. Let it sit for 5–10 minutes until foamy.
  • Add flour, salt, and oil to the yeast mixture. Mix until a soft dough forms.
  • Transfer the dough to a floured surface and knead for about 8–10 minutes until smooth and elastic.
  • Place the dough in a lightly greased bowl, cover with a cloth, and allow it to rise for about 1 hour until doubled in size.
  • Divide the dough into 2–3 portions and shape each into a long oval loaf.
  • Use a fork or knife to create decorative lines across the dough. Sprinkle sesame or nigella seeds on top if desired.
  • Preheat the oven to 230°C (450°F) and bake the bread on a hot baking tray for about 10–12 minutes until golden.
  • Allow the bread to cool slightly before serving warm.

  • Traditional Afghani Noni is baked in a tandoor oven.

  • The bread should be slightly thicker than pita bread.
