For the Chicken Katsu
- 4 boneless, skinless chicken breasts, approximately 150–170 g each
- ½ cup (65 g) all-purpose flour
- 2 large eggs
- 1 tablespoon water
- 1½ cups (75–90 g) panko breadcrumbs
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1–2 tablespoons neutral cooking oil or oil spray
For the Homemade Katsu Sauce
- ¼ cup ketchup
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon rice vinegar
- ½ teaspoon Dijon mustard, optional

Prepare the Chicken
Place each chicken breast on a cutting board.If the breasts are thick, carefully slice them horizontally to create thinner cutlets.Alternatively, place each breast between two sheets of plastic wrap or parchment paper and gently pound it to an even thickness of approximately ½ inch (1–1.5 cm).This helps the chicken cook evenly and remain tender.
Season the Chicken
Season both sides of the chicken with salt and black pepper.Set aside while preparing the breading station.
Prepare the Panko

While the chicken cooks, combine the ketchup, Worcestershire sauce, soy sauce, brown sugar, rice vinegar, Dijon mustard, and ginger in a small bowl.Whisk until smooth.Taste and adjust the sweetness or tanginess according to preference.For a smoother sauce, simmer the mixture gently for 2–3 minutes and allow it to cool slightly.
Rest the Chicken
Transfer the cooked chicken katsu to a wire rack.Allow it to rest for approximately 3–5 minutes.Resting helps the juices redistribute while allowing the crust to remain crisp.
Slice the Katsu
Using a sharp knife, slice each chicken cutlet into strips.Cutting the chicken into strips makes it easier to serve over rice and gives the dish its classic katsu presentation.
Serve
Arrange the sliced chicken katsu over steamed rice.Add shredded cabbage on the side.Drizzle with homemade katsu sauce or serve the sauce separately for dipping.Garnish with lemon wedges, sesame seeds, or green onions.
