Ingredients
  

For the Chicken

  • 1½ pounds (680 g) boneless, skinless chicken thighs or chicken breast
  • 1 tablespoon neutral cooking oil
  • ½ teaspoon black pepper

For the Korean Marinade

  • 2 tablespoons gochujang
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon sesame seeds
  • 1 tablespoon finely chopped scallions

For Garnishing

  • Toasted sesame seeds
  • Chopped scallions
  • Fresh cilantro, optional
  • Lime wedges, optional

Instructions
 

Prepare the Skewers

  • If using wooden or bamboo skewers, soak them in water for approximately 20–30 minutes before cooking.
    This helps reduce the risk of excessive burning.

Prepare the Chicken

  • Cut the chicken into evenly sized bite-sized pieces.
    Try to keep the pieces similar in size so they cook evenly.

Make the Marinade

  • In a large bowl, combine the gochujang, soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, sesame seeds, and chopped scallions.
    Mix well until a smooth marinade forms.

Marinate the Chicken

  • Add the chicken pieces to the bowl.
    Toss until the chicken is thoroughly coated.
    Cover and refrigerate for at least 30 minutes.
    For a deeper flavor, marinate for several hours.

Thread the Chicken

  • Thread the marinated chicken onto the soaked skewers.
    Leave a small amount of space between pieces to encourage even cooking.

Preheat the Air Fryer

  • Preheat the air fryer to 375°F (190°C) for approximately 3–5 minutes, if your air fryer model recommends preheating.

Arrange the Skewers

  • Lightly spray or brush the air fryer basket with oil.
    Place the chicken skewers in a single layer.
    Avoid overcrowding the basket.
    Cook in batches if necessary.

Air Fry the Chicken

  • Cook the skewers at 375°F (190°C) for approximately 12–16 minutes.
    Turn the skewers halfway through the cooking time.

Prepare the Glaze

  • While the chicken cooks, combine the gochujang, honey, soy sauce, rice vinegar, and water in a small saucepan.
    Heat gently over low heat.
    Stir until smooth and slightly thickened.

Garnish

  • Sprinkle with toasted sesame seeds and chopped scallions.
    Add optional fresh cilantro or a squeeze of lime juice.

Serve

  • Serve the Korean chicken skewers hot with steamed rice and your favorite side dishes.

Notes

  • Chicken thighs: Chicken thighs remain particularly juicy and flavorful in the air fryer.
  • Chicken breast: Breast meat can also be used but should not be overcooked.
  • Gochujang: The spice level may vary between brands, so adjust the amount according to your preference.
  • Skewers: Wooden skewers should be soaked before use.
