Ingredients
  

  • 2 cups raw pumpkin seeds, cleaned
  • 1 teaspoon olive oil
  • ½ teaspoon fine salt, or to taste
  • ½ teaspoon garlic powder, optional
  • ½ teaspoon paprika, optional
  • ¼ teaspoon black pepper, optional
  • ¼ teaspoon chili powder, optional

Instructions
 

Remove and Clean the Seeds

  • Cut open a fresh pumpkin and scoop out the seeds. Separate the seeds from the stringy pulp, then rinse them in a bowl of water. Remove any remaining fibers and drain thoroughly.

Dry the Pumpkin Seeds

  • Spread the seeds on a clean kitchen towel and pat them dry. Allow them to air-dry for 20–30 minutes or longer if they are still damp. Drying is important because excess moisture can prevent the seeds from becoming crispy.

Preheat the Air Fryer

  • Preheat your air fryer to 325°F (165°C) for approximately 2–3 minutes if your appliance recommends preheating. Some models do not require this step, so follow your manufacturer's instructions.

Season the Seeds

  • Place the dried pumpkin seeds in a mixing bowl. Add olive oil, salt, and any optional seasonings, such as garlic powder, paprika, or black pepper. Toss until the seeds are evenly coated.

Arrange the Seeds in the Basket

  • Spread the seeds in a single layer in the air fryer basket. Avoid overcrowding the basket because the hot air needs room to circulate. Cook in batches if necessary.

Air Fry Until Golden

  • Air fry at 325°F (165°C) for approximately 8–15 minutes, shaking the basket every 3–4 minutes. Start checking after 5–6 minutes because cooking times vary depending on the seed size, moisture level, and air fryer model.

Cool and Crisp

  • Transfer the seeds to a plate or tray and allow them to cool completely. They will become crunchier as they cool. If the seeds are still soft after cooling, return them to the air fryer for another 1–2 minutes, checking frequently.
