Ingredients
  

  • 3 Cups All-purpose flour
  • 1 tsp Salt
  • 1 Cup Cold butter, cubed
  • 1/2 Cup Ice Water
  • 1 Pound Chicken
  • 1 Onion Finely Chopped
  • 2 Cloves Garlic
  • 1 Bell Pepper Chopped
  • 1 Cup Shredded Cheddar Cheese
  • 1 Tsp Paprika
  • 1/2 Tsp Cayenne Pepper
  • 1 Tsp Salt and Pepper to Taste

Instructions
 

  • Prepare the Dough:
    In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until it becomes frothy.
  • In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil to the flour mixture.
  • Mix until the dough comes together, then knead on a lightly floured surface for about 5-7 minutes until the dough is smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
  • Prepare the Fillings:
    While the dough is rising, prepare your desired fillings by mixing the ingredients in separate bowls.
  • Assemble the Hot Pockets:
    Preheat your oven to 375°F (190°C).
  • Once the dough has risen, punch it down and divide it into 6 equal pieces.
  • Roll each piece into a rectangle, approximately 6x8 inches.
  • Place your desired filling on one half of each rectangle, leaving a small border around the edges.
  • Fold the dough over the filling and press the edges together to seal. You can use a fork to crimp the edges for a better seal.
  • Place the hot pockets on a baking sheet lined with parchment paper.
  • Bake the Hot Pockets:
    Brush the tops of the hot pockets with a little olive oil or an egg wash (1 beaten egg with 1 tbsp water) for a golden finish.
  • Bake in the preheated oven for 20-25 minutes, or until the hot pockets are golden brown and the dough is cooked through.
