medium onion, chopped

tomatoes, chopped

cloves garlic, minced

Fresh cilantro, chopped (for garnish)

Instructions
Heat oil in a pan over medium heat and add cumin seeds. Let them splutter.
Add chopped onions and sauté until golden brown.
Stir in the garlic, ginger, and green chili. Sauté for a minute.
Add chopped tomatoes and cook until they soften.
Sprinkle turmeric, coriander powder, red chili powder, and salt. Mix well.
Add the diced potatoes and cauliflower florets. Stir to coat with the spices.
Pour in a little water, cover, and let simmer for 15-20 minutes, stirring occasionally.
Once the vegetables are tender, add garam masala and mix well.
Garnish with fresh cilantro and serve hot with roti, naan, or rice.
Notes
Adjust spice levels according to your preference. You can add peas for extra texture and flavor.
