Ingredients
  

  • 2 medium potatoes, diced
  • 1 small cauliflower, cut into florets
  • 1 medium onion, chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 -inch ginger, grated
  • 1 green chili, chopped (optional)
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • ½ tsp red chili powder
  • ½ tsp salt (or to taste)
  • 2 tbsp oil
  • ¼ cup water
  • Fresh cilantro, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions
 

  • Heat oil in a pan over medium heat and add cumin seeds. Let them splutter.
  • Add chopped onions and sauté until golden brown.
  • Stir in the garlic, ginger, and green chili. Sauté for a minute.
  • Add chopped tomatoes and cook until they soften.
  • Sprinkle turmeric, coriander powder, red chili powder, and salt. Mix well.
  • Add the diced potatoes and cauliflower florets. Stir to coat with the spices.
  • Pour in a little water, cover, and let simmer for 15-20 minutes, stirring occasionally.
  • Once the vegetables are tender, add garam masala and mix well.
  • Garnish with fresh cilantro and serve hot with roti, naan, or rice.

Notes

Adjust spice levels according to your preference. You can add peas for extra texture and flavor.
