  • Water for boiling

For the Peanut Sauce

  • ¼ cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 2–3 tablespoons warm water

Instructions
 

  • Cook the soba noodles according to package instructions. Drain and rinse under cold water.
  • Whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, garlic, ginger, and warm water until smooth.
  • Slice and prepare all vegetables while the noodles cool.
  • Place noodles in a large bowl and pour the peanut sauce over them.
  • Mix until the noodles are evenly coated with the sauce.
  • Fold in the bell pepper, carrot, cucumber, and green onions.
