Ingredients
  

  • 4 egg yolks
  • 1/3 cup granulated sugar
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • Optional: pinch of cinnamon

Instructions
 

  • Whisk egg yolks and sugar until pale and thick.
  • Heat milk and cream in a saucepan until warm but not boiling.
  • Slowly pour warm milk into the egg mixture while whisking.
  • Return mixture to the saucepan and cook on low until slightly thickened.
  • Remove from heat and stir in vanilla and nutmeg.
  • Add alcohol if using and mix well.
  • Chill in the refrigerator for at least two hours.

Notes

  • Don’t boil the mixture or it may curdle.
  • Add alcohol only after cooking.
  • Chill fully for the best flavour.
  • Use fresh nutmeg for a stronger aroma.
  • Separate eggs carefully to avoid lumps.
