Ingredients
  

  • 2 pounds of russet or Yukon gold potatoes
  • 1 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 2 celery stalks, finely chopped
  • ½ cup red onion, diced
  • 3 hard-boiled eggs, chopped
  • 2 tablespoons dill relish or pickles
  • Salt and pepper to taste
  • Paprika for garnish

Instructions
 

  • Start by boiling potatoes until tender
  • Drain and let them cool before peeling and dicing.
  • Place the chopped potatoes in a large bowl.
  • Add mayonnaise, mustard, celery, onions, eggs, and relish.
  • Mix gently to keep the chunks intact. Season with salt and pepper.
  • Refrigerate for at least an hour before serving.
  • Sprinkle paprika on top for colour and flavour.
