Ingredients
  

  • 2 cups cooked shredded chicken
  • 1 can (10 oz) enchilada sauce (red or green)
  • 1 cup sour cream
  • 1 can (4 oz) diced green chilies
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 flour or corn tortillas
  • 1 small onion, finely chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • In a skillet, heat olive oil and sauté onions until soft. Add shredded chicken, green chilies, salt, and pepper. Stir until well combined.
  • Mix sour cream with half of the enchilada sauce to create a creamy sauce.
  • Spoon a bit of the chicken mixture into each tortilla, sprinkle with cheese, and roll tightly. Place seam-side down in the baking dish.
  • Pour the remaining enchilada sauce and sour cream mixture over the top. Sprinkle with remaining cheese.
  • Bake uncovered for 25 minutes or until bubbly and golden.
  • Garnish with chopped cilantro and serve hot.

  • Use rotisserie chicken for a quick and easy version.
  • Adjust spice level by choosing mild or hot enchilada sauce.
  • Substitute Greek yogurt for sour cream for a lighter option.
