- 3 large eggs
- ¾ cup granulated sugar
- ½ cup unsalted butter, melted and cooled
- 1 tsp anise extract (or 1 tbsp anise seeds)
- 1 ¾ cups all-purpose flour
- 2 tsp baking powder
- Optional: powdered sugar for dusting
Preheat the pizzelle iron according to the manufacturer’s instructions.
In a mixing bowl, beat eggs and sugar until light and pale.
Add melted butter and anise extract, mixing until smooth.
In a separate bowl, whisk flour and baking powder.
Gradually combine dry ingredients with wet ingredients to form a soft batter.
Drop a spoonful of batter onto the hot pizzelle iron.
Close the lid and cook for 30–60 seconds until lightly golden.
- Pizzelles crisp fully as they cool.
- Do not overfill the iron to avoid spreading.
- Anise flavour strengthens after cooling.
- Work quickly if shaping cookies while warm.
- Store in an airtight container once cooled.
