Ingredients
  

  • 3 large eggs
  • ¾ cup granulated sugar
  • ½ cup unsalted butter, melted and cooled
  • 1 tsp anise extract (or 1 tbsp anise seeds)
  • 1 ¾ cups all-purpose flour
  • 2 tsp baking powder
  • Optional: powdered sugar for dusting

Instructions
 

  • Preheat the pizzelle iron according to the manufacturer’s instructions.
  • In a mixing bowl, beat eggs and sugar until light and pale.
  • Add melted butter and anise extract, mixing until smooth.
  • In a separate bowl, whisk flour and baking powder.
  • Gradually combine dry ingredients with wet ingredients to form a soft batter.
  • Drop a spoonful of batter onto the hot pizzelle iron.
  • Close the lid and cook for 30–60 seconds until lightly golden.

Notes

  • Pizzelles crisp fully as they cool.
  • Do not overfill the iron to avoid spreading.
  • Anise flavour strengthens after cooling.
  • Work quickly if shaping cookies while warm.
  • Store in an airtight container once cooled.
