Ingredients
  

  • 1 cup rolled oats
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup honey or brown sugar
  • ½ cup milk
  • ¼ cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 ½ cups finely chopped apples

Instructions
 

  • Preheat oven to 350°F (175°C). Line a muffin pan with paper liners.
  • Mix oats, flour, baking powder, baking soda, cinnamon, and salt in a bowl.
  • In another bowl, whisk eggs, honey, milk, oil, and vanilla until smooth.
  • Fold dry ingredients into wet mixture.
  • Gently stir in chopped apples.
  • Divide batter into muffin cups.
  • Bake for 20–25 minutes, or until a toothpick comes out clean.
  • Cool before serving.
