- 4 sheets matzo
- 2 cups warm water
- 3 large eggs
- ½ cup sugar
- 2 tbsp melted butter or vegetable oil
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- ¼ tsp salt
- 3 medium apples, peeled and diced
Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
Break the matzo sheets into pieces and soak them in warm water for about 2 minutes. Drain well and gently squeeze out excess water.
In a large bowl, whisk eggs, sugar, melted butter (or oil), vanilla extract, cinnamon, and salt.
Add the softened matzo, diced apples, and raisins to the bowl. Mix until evenly combined.
Spread the mixture evenly in the prepared baking dish.
Bake for 40–45 minutes until the top is golden brown and the kugel is set.
Allow the kugel to cool for about 10–15 minutes before slicing.
Serve warm or at room temperature.
