- 2 lbs fresh apricots (pitted and chopped)
- 3 cups granulated sugar
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest (optional)
Wash, pit, and chop apricots.
Place apricots, sugar, and lemon juice in a large saucepan.
Cook over medium heat, stirring often until sugar dissolves.
Simmer 30–40 minutes until mixture thickens.
Test consistency on a chilled plate; if it wrinkles, the jam is ready.
Pour hot jam into sterilized jars, seal, and cool.

- Skins add color and flavour, no peeling required.
- Adjust sugar depending on fruit sweetness.
- Store sealed jars in a cool, dark place.
- Refrigerate after opening and consume within 3 weeks.
