- 1 cup apricot preserves or jam
- 2 tablespoons Dijon mustard
- 2 tablespoons soy sauce
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- ½ teaspoon salt
- 1 tablespoon olive oil
- Fresh herbs (thyme or parsley) for garnish
Preheat oven to 400°F (200°C).
Season pork with salt, pepper, and garlic powder.
