Ingredients
  

  • 1 lb (450 g) fresh green beans, trimmed
  • 3 tablespoons extra-virgin olive oil
  • 3 cloves garlic, finely minced
  • ½ cup crumbled feta cheese
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • ½ teaspoon dried oregano
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon salt, or to taste
  • 2 tablespoons toasted almonds, optional
  • Lemon wedges, for serving

Instructions
 

  • Wash the green beans thoroughly and trim both ends. If the beans are particularly long, cut them into smaller pieces.
  • Bring a large pot of lightly salted water to a boil. Add the green beans and cook for approximately 4–6 minutes, until they are tender but still slightly crisp.
  • Drain immediately. For especially vibrant green beans, transfer them to ice water for a minute before draining again.
  • Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30–60 seconds, stirring frequently. Avoid browning the garlic too much.
  • Add the cooked green beans to the skillet. Toss gently so that the beans become coated with the garlic-infused olive oil.
  • Turn off the heat. Add lemon juice, lemon zest, parsley, dill, oregano, and black pepper. Toss gently.
  • Transfer the green beans to a serving dish and scatter crumbled feta generously over the top.
  • If desired, add toasted almonds for crunch and serve with fresh lemon wedges.

Notes

  • Fresh beans work best: Choose beans that are firm, bright green, and free from soft spots.
  • Don't overcook: Slightly crisp beans provide the best texture.
  • Watch the garlic: Garlic can become bitter if heavily browned.
  • Use good feta: Greek-style feta made from sheep's milk offers excellent flavor and texture.
  • Control the salt: Add salt only after tasting the finished dish.
