- 4–5 bone-in chicken thighs or drumsticks
- 1 ½ cups long-grain white rice
- 2 ½ cups chicken broth
- 2 tablespoons olive oil
- 1 small onion (chopped)
- 3 cloves garlic (minced)
- 1 red bell pepper (chopped)
- 1 teaspoon paprika
- ½ teaspoon cumin
- ½ teaspoon oregano
- 1 teaspoon salt
- ¼ teaspoon turmeric or annatto powder (for color)
- 2 tablespoons chopped cilantro or parsley
Season the chicken with salt, pepper, paprika, and cumin.
Heat olive oil in a large pot or skillet over medium heat. Add the chicken and cook for 5–6 minutes per side until golden brown. Remove and set aside.
In the same pot, sauté the onion, garlic, and bell pepper for about 2–3 minutes until fragrant and slightly softened.
Stir in the diced tomatoes, oregano, turmeric (or annatto), and additional seasoning. Cook for another minute.
Add the rice and mix well. Pour in the chicken broth and stir gently.
Place the browned chicken back on top of the rice. Cover and simmer on low heat for about 25 minutes until the rice is tender and the chicken is fully cooked.
Stir in the peas during the last 5 minutes of cooking. Garnish with chopped cilantro and optional olives before serving.
