  • 1 cup cooked shelled edamame
  • 3 green onions, sliced
  • ½ cup chopped fresh cilantro
  • 2 tablespoons toasted sesame seeds
  • ¼ cup chopped roasted peanuts or cashews (optional)

For the Sesame Ginger Dressing

  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon fresh lime juice
  • 2 teaspoons grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sriracha (optional)
  • 1 tablespoon creamy peanut butter (optional for a creamier dressing)
  • 2 tablespoons water, if needed

Instructions
 

  • Cook the noodles according to the package instructions until just tender.
  • Drain the noodles and rinse them thoroughly under cold water to stop the cooking process.
  • In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, lime juice, ginger, garlic, sriracha, and peanut butter until smooth.
  • Add water as needed to achieve a pourable consistency.
  • Place the cooled noodles in a large mixing bowl.
  • Add the cabbage, carrots, cucumber, bell pepper, edamame, and green onions.
  • Pour the dressing over the noodles and toss until everything is evenly coated.
  • Garnish with cilantro, sesame seeds, roasted peanuts, and serve immediately or chilled.
