  • 4 cups cubed crusty bread (day-old works best)
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1 cup sliced mushrooms
  • 1 cup shredded Gruyère or Swiss cheese
  • 6 large eggs
  • 1½ cups milk or half-and-half
  • ½ cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon nutmeg (optional)
  • 2 tablespoons chopped fresh parsley or chives

Instructions
 

  • Cook vegetables: Heat olive oil in a skillet over medium heat. Sauté onion and garlic for about 2 minutes. Add mushrooms and asparagus and cook for another 3–4 minutes until slightly tender.
  • Prepare baking dish: Grease a 9×13-inch casserole dish.
  • Layer bread: Spread half of the cubed bread evenly in the dish.
  • Add vegetables: Sprinkle half of the sautéed vegetables over the bread.
  • Add cheese: Sprinkle half of the shredded cheese on top.
  • Repeat layers: Add remaining bread, vegetables, and cheese.
  • Mix custard: In a bowl, whisk together eggs, milk, salt, pepper, and nutmeg.
  • Pour mixture: Pour the egg mixture evenly over the layered ingredients.
  • Refrigerate overnight: Cover and refrigerate for at least 8 hours.
  • Bake: Preheat oven to 375°F (190°C) and bake uncovered for 35–40 minutes until the top is golden and the center is set.
  • Serve: Let rest for 5–10 minutes before slicing and garnish with fresh herbs.
