Ingredients
  

For the Pastry

  • 200 g all-purpose flour
  • 150 g ground almonds or hazelnuts
  • 150 g unsalted butter, cold and cubed
  • 100 g granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon finely grated lemon zest
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt

For the Filling

  • 250–300 g raspberry jam or redcurrant jam
  • 1 tablespoon lemon juice, optional

For Finishing

  • 1 egg, beaten, for brushing
  • Powdered sugar, for dusting
  • Toasted sliced almonds, optional

Instructions
 

  • In a large bowl, combine the flour, ground almonds or hazelnuts, sugar, cinnamon, cloves, lemon zest, and salt.
  • Using your fingertips or a pastry cutter, work the butter into the flour mixture until it resembles coarse crumbs.
  • If necessary, gently knead it a few times until no dry flour remains.
  • Chilling makes the dough easier to handle and helps prevent excessive spreading during baking.
  • Preheat the oven to 175°C (350°F).
  • Grease a 23 cm (9-inch) tart or springform pan.
  • Take approximately two-thirds of the chilled dough and roll it between sheets of parchment paper until it is approximately 5–6 mm thick.
  • Stir the raspberry or redcurrant jam until smooth.
  • Spread the jam evenly over the pastry base, leaving a small border around the edge.
  • Arrange the strips diagonally across the jam, then place another set of strips in the opposite direction to create a classic lattice pattern.
  • Press the edges gently to secure the strips.
  • Slice into wedges and serve with coffee, tea, whipped cream, or simply enjoy it on its own.

Notes

  • Use cold butter: Cold butter helps create a tender, crumbly pastry.
  • Choose good-quality nuts: Freshly ground almonds or hazelnuts provide the best flavor.
  • Don't overwork the dough: Excessive mixing can make the pastry tough.
  • Chilling is important: Refrigeration makes the dough easier to roll and shape.
  • Use tart jam: Raspberry or redcurrant preserves provide an excellent contrast to the sweet pastry.
  • Don't overfill: Too much jam can bubble over the lattice while baking.
  • Cool before slicing: The filling needs time to set.
