For the Cookie Dough
- 250 g all-purpose flour
- 120 g unsalted butter, softened
- 100 g powdered sugar
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- 1 pinch salt
- 1–2 tablespoons milk, if needed
For the Filling
- 100 g peach or apricot jam
- 50 g softened butter
- 40 g powdered sugar
- ½ teaspoon vanilla extract
- 2 tablespoons finely ground cookie crumbs or ground almonds
For the Peach Decoration
- 2–3 tablespoons peach or apricot nectar
- Red and yellow food coloring, preferably gel-based
- Fresh mint leaves, optional, for decoration
Add the softened butter and powdered sugar to a large bowl.Beat until smooth and creamy.Add the egg and vanilla extract and mix until well combined. Whisk together the flour, baking powder, and salt.Gradually add the dry ingredients to the butter mixture.Mix until a soft dough forms. Shape the dough into a disk.Wrap it and refrigerate for approximately 30 minutes.This makes the dough easier to shape and helps prevent excessive spreading. Preheat the oven to 175°C (350°F).Line a baking tray with parchment paper.Take small portions of dough and roll them into smooth balls approximately 2–3 cm in diameter. Place them on the baking tray with enough space between each piece.
Bake for approximately 10–12 minutes, or until the bottoms are lightly golden.The tops should remain relatively pale. Allow the cookies to cool on the baking tray for several minutes.Transfer them to a wire rack and cool completely. Using a small spoon or the tip of a paring knife, carefully remove a small amount from the flat side of each cookie.Do not make the cavity too deep because the shells need to remain sturdy.Reserve the crumbs. Place a small amount of filling into the cavity of one cookie.Press another cookie against it to form a complete peach shape.Gently wipe away any excess filling. Very quickly dip or brush one side of each assembled cookie with the yellow mixture.Then lightly add the orange-red color to the opposite side and edges.Avoid soaking the cookies, as too much liquid can make them soggy. If desired, place a small fresh mint leaf next to each cookie or gently attach a small edible green decoration.
Place the finished cookies in an airtight container and allow them to rest for several hours.The filling will soften the cookie slightly and create a wonderfully tender texture.
