Authentic Algerian Dersa Recipe

Dersa is a traditional Algerian spice paste made with chili, garlic, and spices, perfect for marinating or seasoning dishes.

Ingredients
  

  • 4 cloves garlic, minced
  • 2 dried red chili peppers (or fresh chilies)
  • 1 tsp cumin powder
  • 1 tsp paprika
  • ½ tsp salt
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • ½ tsp black pepper

Instructions
 

  • Soak the dried chili peppers in warm water for 5 minutes to soften them.
  • In a mortar and pestle (or food processor), grind the garlic and chili peppers into a paste.
  • Add cumin, paprika, salt, and black pepper, and continue grinding.
  • Slowly drizzle in olive oil and mix until a smooth paste forms.
  • Stir in the lemon juice and mix well.
  • Use immediately or store in an airtight container in the refrigerator for up to a week.

Notes

  • Adjust the spice level by using more or fewer chili peppers.
  • Dersa can be used as a marinade for meats or a dip for bread.
