Authentic Chickpea Curry

Ingredients
  

  • 2 cups canned or cooked chickpeas
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 3 cloves garlic, minced
  • 1 -inch ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp red chili powder
  • 1/2 tsp salt (or to taste)
  • 1 cups coconut milk or water
  • 2 tbsp oil
  • Fresh cilantro for garnish

Instructions
 

  • Heat oil in a pan and add cumin seeds. Let them splutter.
  • Add chopped onions and sauté until golden brown.
  • Stir in garlic and ginger, cooking for another minute.
  • Pour in the tomato puree and cook until oil starts to separate.
  • Add all the spices (coriander, turmeric, garam masala, and chili powder) and mix well.
  • Stir in the chickpeas and add coconut milk or water.
  • Simmer for 15-20 minutes until the curry thickens.
  • Garnish with fresh cilantro and serve with rice or naan.

Notes

  • Adjust spice levels according to taste.
  • For a creamier texture, mash some chickpeas into the gravy.
