- 2 cups canned or cooked chickpeas
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 3 cloves garlic, minced
- 1 -inch ginger, grated
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- 1 tsp red chili powder
- 1/2 tsp salt (or to taste)
- 1 cups coconut milk or water
- 2 tbsp oil
- Fresh cilantro for garnish
Heat oil in a pan and add cumin seeds. Let them splutter.
Add chopped onions and sauté until golden brown.
Stir in garlic and ginger, cooking for another minute.
Pour in the tomato puree and cook until oil starts to separate.
Add all the spices (coriander, turmeric, garam masala, and chili powder) and mix well.
Stir in the chickpeas and add coconut milk or water.
Simmer for 15-20 minutes until the curry thickens.
Garnish with fresh cilantro and serve with rice or naan.
