Chtitha Batata is a flavorful Algerian potato stew simmered in a spiced tomato sauce, perfect for a comforting and budget-friendly meal.

Ingredients
  

  • 4 large potatoes, peeled and cut into chunks
  • 1 onion, finely chopped
  • 4 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tsp paprika
  • 1 tsp ground cumin
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt (or to taste)
  • 1 tsp harissa (optional for spice)
  • 1 can (400g) crushed tomatoes
  • 2 cups water or vegetable broth
  • Fresh cilantro or parsley for garnish

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and garlic, sautéing until fragrant and slightly golden.
  • Stir in the paprika, cumin, black pepper, and harissa (if using), cooking for about a minute.
  • Pour in the crushed tomatoes and mix well with the spices.
  • Add the potato chunks and stir to coat them in the sauce.
  • Pour in the water or vegetable broth and bring to a gentle boil.
  • Reduce heat to low, cover, and simmer for about 30-40 minutes until the potatoes are tender.
  • Adjust seasoning as needed and garnish with fresh cilantro or parsley before serving.

Notes

For extra depth of flavor, you can add a pinch of cinnamon or a squeeze of lemon juice before serving.
