crushed tomatoes

Instructions
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and garlic, sautéing until fragrant and slightly golden.
Stir in the paprika, cumin, black pepper, and harissa (if using), cooking for about a minute.
Pour in the crushed tomatoes and mix well with the spices.
Add the potato chunks and stir to coat them in the sauce.
Pour in the water or vegetable broth and bring to a gentle boil.
Reduce heat to low, cover, and simmer for about 30-40 minutes until the potatoes are tender.
Adjust seasoning as needed and garnish with fresh cilantro or parsley before serving.
Notes
For extra depth of flavor, you can add a pinch of cinnamon or a squeeze of lemon juice before serving.
