- 2 cups cooked jasmine rice (preferably day-old)
- 1 cup fresh crab meat (lump or claw)
- 2 eggs, lightly beaten
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- ½ small onion, finely chopped
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp sugar
- ½ tsp white pepper
- 2 green onions, chopped
- ½ lime, cut into wedges
- Fresh cilantro for garnish
Prepare the ingredients: If using fresh rice, let it cool completely to avoid clumping.
Sauté the aromatics: Heat vegetable oil in a large pan over medium heat. Add garlic and onion, and sauté until fragrant.
Cook the eggs: Push the aromatics to the side of the pan and pour in the beaten eggs. Scramble until just set.
Add the rice: Stir in the cooked rice, breaking up any clumps.
Season the dish: Add soy sauce, fish sauce, sugar, and white pepper. Stir well to combine.
Add the crab meat: Gently fold in the crab meat to avoid breaking it up too much.
Finish with green onions: Sprinkle in the chopped green onions and give everything a final toss.
Serve: Garnish with fresh cilantro and serve with lime wedges on the side.

Use day-old rice for the best texture. Freshly cooked rice can be too moist and sticky.
