Ingredients
  

  • 2 pounds waxy potatoes (Yukon Gold or red potatoes)
  • 6 slices Bacon, chopped
  • 1 small onion, finely chopped
  • ½ cup chicken broth
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Boil potatoes in salted water until tender but firm. Cool slightly and slice.
  • Fry bacon until crispy. Remove and set aside, keeping the drippings.
  • Sauté onions in bacon fat until soft and fragrant.
  • Add broth, vinegar, mustard, sugar, salt, and pepper to the pan. Warm gently.
