Ingredients
  

  • 2 cups cooked chickpeas (or 1 can, drained)
  • ¼ cup tahini
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic (extra for “kicked-up” flavor)
  • 3 tablespoons olive oil
  • ½ teaspoon ground cumin
  • ½ teaspoon salt (or to taste)
  • 3–4 tablespoons cold water
  • ½ teaspoon paprika or Aleppo pepper
  • Extra olive oil for drizzling

Instructions
 

  • Slightly warm chickpeas in hot water for 5 minutes to soften them for a smoother hummus.
  • In a food processor, blend tahini and lemon juice for about 1 minute until creamy.
  • Add garlic, cumin, and salt. Blend again until smooth.
  • Add chickpeas gradually while blending.
  • Slowly add cold water until the hummus becomes light and creamy.
  • Add more lemon, salt, or garlic if desired.
  • Spread hummus in a bowl, drizzle with olive oil, and sprinkle paprika and parsley on top.
