A warm, spiced Mexican coffee sweetened with piloncillo and infused with cinnamon.

- 4 cups water
- 1/2 cups ground coffee
- 1 small piloncillo cone (or 1/2 cup brown sugar)
- 1 cinnamon stick
- 2 whole cloves (optional)
- 1/2 tsp vanilla extract
- Whipped cream or milk (optional, for serving)
Boil water and spices: In a saucepan or traditional clay pot, bring water, cinnamon stick, and cloves (if using) to a boil.
Dissolve piloncillo: Add the piloncillo and stir until fully dissolved.
Add coffee: Stir in the ground coffee, reduce heat, and simmer for about 5 minutes.
Strain and serve: Remove from heat and strain the coffee through a fine mesh sieve or cheesecloth into cups.
Optional toppings: Add a splash of milk or top with whipped cream for extra richness.

For an extra kick, add a splash of tequila or KahlĂșa.
